Pina Colada (Pineapple Coconut) No Bake Energy Balls

I have tropical vacation vibes on my mind. These healthy energy balls give the feeling of sitting by the pool, palm trees swaying and the hot sun shining while sipping a pina colada. They’re a fun summer healthy treat, that counts as a healthy snack or healthy dessert.
Many bliss ball recipes use ingredients I wouldn’t normally have on hand, are pricier or might be harder to find. I use a mix of everyday ingredients, like oats, honey and cashews. Raw cashews are super easy to find, and I keep them on hand to roast myself or use raw, they’re more versatile that way. I actually make homemade oat flour by blending rolled oats in a blender until they’re a fine texture. This recipe uses soaked raw cashews because they blend into a paste much easier. You can soak the cashews for about 10-15 minutes before you start making this energy ball recipe.
Does Dried Pineapple Have a Lot of sugar?
The quick answer is yes, but in the right context it’s not ‘bad.’ Dried pineapple is a sweeter fruit option, and by itself it’s not a great snack choice if you’re trying to stabilize blood sugar (or have high blood sugar or low blood sugar), or want to reduce inflammation. When you combine pineapple and coconut together, there’s better balance with the healthy fats from coconut, lowering the glycemic load. In this healthy energy ball recipe, there’s only 2-3 rings of dried pineapple divided between 12-14 balls, so it’s not much pineapple per serving anyways.
Recipe
Makes 12-14 balls
Ingredients
1/3 cup chopped dried pineapple (homemade is best flavor, but I found an organic one at Target I used for this recipe)
1/3 cup raw cashews, soaked in water for 10-15 mins
1 tsp honey (add if your pineapple is tart)
1 tbsp unsweetened shredded coconut, + extra to roll
1 tsp unrefined coconut oil
1/4 cup + 1 tbsp oat flour
1/8 tsp fine sea salt
Directions
Add raw cashews to a food processor and blend until it makes a paste, this takes about 1-2 minutes.
Add honey, salt, dried pineapple and coconut oil and blend until smooth. Scrape sides as needed.
Add the coconut flakes and oat flour and blend until combined.
Roll into balls, I used a healing 1 tsp per ball. I squished the mixture together well and rolled gently to hold the shape. Roll each ball in shredded coconut. Allow them to set for a few hours!
