Hearty Salads For Any Season (Even Winter!)
Salads are part of every diet, but they're often boring and unsatisfying. My strategies for making hearty salads that are nutrient dense and calorie controlled are:
A lot of vegetables
1-3 portioned sources of fat
1 healthy carbohydrate
Protein
Different textures and colors
The type of salad I make depends on what is in season and the cuisine or ingredients I'm in the mood for. Below are three ideas to give you some inspiration to mastering salads for all seasons.
Romaine topped with:
(fat) Avocado
(fat & protein) Crispy bacon
(protein) Shredded chicken
(healthy carb) Chick peas
Chopped tomatoes
Sliced scallions
Shredded carrot
(fat) Honey mustard dressing
A little Mayo
A little sour cream
Maple syrup or honey
Mustard
Arugula mixed with hot quinoa (it slightly wilts the arugula and melts the feta), feta, chopped tomatoes and red onion, topped with salmon, tossed with olive oil and fresh squeezed lemon.
Spring mix topped with roasted red peppers, sautéed zucchini, sliced red onion, farro and sauteed Halloumi (firm goat's milk cheese, can substitute fresh mozzarella or feta).
