Gut Healing and Immune Boosting Sweet Potato and Coconut Soup

Sweet potatoes, bone broth and coconut fat are especially gut healing. This soup is fully blended to help make digesting and absorbing the anti inflammatory nutrients easier, calm the digestive system and boost immunity. Plus, it’s super comforting.

 
 

I love the combination of sweet potatoes and coconut. Sometimes I roast sweet potato halves and mash them inside the skin with some coconut oil, cinnamon and sea salt for an easy side. But this recipe can stand as a light meal or snack since it’s balanced with protein from bone broth, fiber from sweet potatoes and fat from coconut oil. It’s a simple, nourshing and healing mix. One study found that sweet potatoes are anti inflammatory in people with Crohn’s disease.

Cooked and blended foods like soup are easier for the body to digest. Cooking high fiber foods breaks down the fiber, and blending allows the nutrients to be released easier. This recipe is also an easy meal-prep option with only three ingredients, and minimal steps or time to put together.

Ingredients

  • 2 small to medium sweet potatoes with skin, chopped into large chunks

  • 1 carton of chicken bone broth (shouldn’t be subbed for non-bone broths because you’d lose the healing properties and protein)

  • 1/4 cup of unrefined, organic coconut oil (can be subbed for can of full fat coconut milk if you want more creaminess)

  • Sea salt to taste

  • *optional: you can add a few generous dashes of cinnamon if desired

Directions

  1. In a soup pot add sweet potato chunks, bone broth and a couple pinches of sea salt (you can add cinnamon at this point if you choose to add it!). Bring to boil and simmer for 30-40 minutes, until sweet potatoes are soft and cooked through.

  2. Allow to cool on stove top.

  3. Once cooled, add coconut oil and blend in blender until completely smooth (Vitamix works really well for this, allow time in the blender for the consistency to be really smooth.)

  4. Adjust thickness to your preference, you can add water to thin if desired. Adjust salt to preference.

  5. This soup freezes and reheats well!
