Flatbread pizza is an easier and lighter way to enjoy pizza. I make this quick and easy yeast-free flatbread crust with ancient grain flour (that doesn’t taste whole-wheaty), which easily spreads thin and crisps up to support virtually any topping combination. You’ll get a perfect crunchy thin crust pizza. I’ll forever miss Jule’s Pizza in Princeton (open in LA if you ever read this…please) and I like to recreate their pizza style at home.
To make pizza a bit healthier, I like to focus on a good balance of carbs, fats and protein. You can easily reduce the carbs by opting for a pizza with thin crust and using a whole wheat flour. You can boost fiber through using whole wheat flour and adding greens and veggies as pizza toppings. Cheese delivers both protein and fat, and you can boost the protein by adding chicken as a topping.
Below I’m sharing my go-to flatbread recipe along with seven homemade pizza ideas, including pizza topping suggestions. It’s easy to think of a simple white or plain pizza, so to add extra inspiration I’m sharing more gourmet pizza recipes.
Easy Flatbread Recipe
(adapted from Sue Bee Homemaker)
Ingredients
3 cups flour (I use 1.5 cups einkorn all purpose flour mixed with 1.5 cups whole grain einkorn flour)
1.5 tsp fine sea salt
1/4 cup extra virgin olive oil
1 cup warm water
Directions
In a big bowl mix salt, oil and water into flour until combined
Place mixture on the counter and knead the dough until it forms a smooth ball, sprinkle extra flour onto dough and surface if the dough is sticky. This takes a couple of minutes.
Divide dough into 2-6 pieces depending on how big and thin you’d like your flatbread to be. I usually do 4 pieces. Cover with a towel and let sit for 30 minutes on the counter, to allow all the flour to hydrate.
Precook the flatbreads prior to making flatbread pizza by heating oven to 425F. Spread the dough out onto a baking sheet or stone and bake for 10ish minutes until it’s just cooked, and not dough. It’ll crisp up after you add toppings and bake again. You can do this ahead, and build/bake the pizzas later. I bake the pizzas at 425F also.
Bruschetta Pizza
This is a Jule’s Pizza recreation, my favorite pizza of theirs, and it’s simple to make at home. You can use store or restaurant bought bruschetta. For homemade bruschetta, I add chopped (seeds removed) roma tomatoes, minced red onion, a little minced garlic, fresh chopped basil, a drizzle of extra virgin olive oil, a splash of red wine vinegar and sprinkle of sea salt to taste.
To make the pizza, layer on your mix of cheese. I do fresh mozzarella and/or an Italian cheese blend. Bake until the cheese and crust are golden brown, about 15 minutes. Add the fresh bruschetta on top.

BBQ (Ranch) Chicken Pizza
If you’re looking for chicken pizza ideas, this is a really satisfying one.

Base layer of cheese (I like to mix cheddar into whatever cheese I’m using)
Shredded chicken (grilled, baked, rotisserie…)
Sliced red onion or scallion
Your favorite BBQ sauce (either a layer on the bottom before cheese or drizzled on top)
Ranch dressing to dip if you want (I love Tessamae’s brand in the produce fridge section)
Pear, Blue Cheese and Arugula Pizza
File this one under gourmet white pizza ideas. I love a sweet and savory combo and this is just that.

Crumbled blue cheese (my fave is gorgonzola dolce from Whole Foods)
Fresh arugula as soon as it comes out of oven to wilt

This is a fun variation of a traditional margarita pizza, and a delicious, simple veggie pizza option.

This isn’t necessarily one of those unique pizza ideas, but it’s delicious and a great alternative to takeout.

This cold veggie pizza is great for warmer weather and easy to make for entertaining too. You’d bake the dough until fully cooked and assemble the pizza once it’s cooled.
